Eggs!

I love eggs.

I really really do. I eat them almost everyday and on weekends I love to experiment with them. They are usually my go to protein boost every morning after my workouts. Most of the time I only have the egg whites (cause I'm in a rush and want to just have a protein kick), but on weekends I love to have yolk and all. Recently I've gotten to cutting them up and putting them in my grits in the morning. Yum! Omelettes are a big deal in the Dubya house and strongly requested on Saturday mornings. Usually I use leftover fixings from the week... cut up onions, mushrooms, leftover spinach, and make either a veggie omelette which sometimes comes out like a fritatta.

We're serious about breakfast.

Eggs are a great source of protein but they also have wonderful other nutrients and benefits as well. Eggs contain a cartenoid content, specifically lutein that is beneficial to the eyes. They also contain a high quality of protein and 9 essential amino acids. The egg yolk has choline which is an important nutrient that helps to regulate the brain, nervous system, and cardiovascular systems. Eggs contain the good fat! Finally they have Vitamin D (very rare to find in naturally occurring foods) and promote healthy hair and nails because of the high amount of vitamins and minerals.
